Egg Bites

Method

Step 1

Heat oven to 180C

Step 2

Oil the muffin tin so the egg bites won't stick in the oven.

Step 3

In a large bowl, whisk the eggs with the grated cheese, milk, salt and pepper, until combined.

Step 4

Add the diced tomatoes, spinach, and green onions; stir to combine.

Step 5

Divide the mixture evenly among the muffin cups.

Step 6

Bake until they are set, puffed, and light golden, 15 to 18 minutes (they will deflate once removed from the oven).

Ingredients

  • Oil (Avocado, coconut or olive work best), or butter.
  • 8 large eggs
  • 100g cheddar cheese
  • 70ml cup semi skimmed milk
  • Pinch of sea salt
  • Black pepper - to taste
  • 150g diced tomatoes
  • 50g coarsely chopped packed baby spinach
  • 50g thinly sliced spring onions
