Sweet Potato, Spinach & Egg Bake

Method

Step 1

Preheat the oven to 190°C (170°C fan).  

 

Step 2

Toss the sweet potato with olive oil, salt, and pepper. Roast for 20–25 minutes until just tender.  Meanwhile, lightly sauté the onion in a non-stick pan until soft. Add garlic for 30 seconds, then wilt the spinach.  

 

Step 3 

Spread the sweet potato in an ovenproof dish. Add the onion and spinach.  

 

Step 4

Whisk eggs with milk, seasoning, and spices.  

 

Step 5

Pour over the vegetables and gently stir.  

 

Step 6

Bake for 20–25 minutes, until set and lightly golden. 

Ingredients

  • 400g sweet potatoes, peeled and diced  
  • 1 tbsp olive oil  1 small onion, finely chopped  
  • 1 garlic clove, crushed  60g fresh spinach  
  • 5 Duncan's Eggs  
  • 80ml semi-skimmed milk (or unsweetened oat milk)  
  • Salt & black pepper  
  • Optional: pinch of paprika, nutmeg, or dried herbs
