Step 1
Boil your eggs in a pan of boiling water. Once cooked, cool in cold water and set aside.

In a bowl, mix the pork mince and herbs together with salt and pepper. Heat the olive oil in a frying pan and cook the mushrooms and garlic until the mushrooms are cooked through.
Step 3
Add the cooked mushrooms to the pork, carefully add half a beaten egg and 1 tbsp flour, mix until well combined.
Step 4
Preheat the oven to 190°C/170°C fan/gas 5 and line a baking tray with baking paper. Put the remaining flour on a plate. Peel the eggs and lightly roll each one in the flour.
Step 5
Divide the pork mixture into eight equal balls. Slightly flatten one pork ball, put an egg in the centre, then wrap the pork mixture around it. Cover and chill for one hour.
Step 6
Put the remaining beaten egg into a bowl, roll the chilled eggs in the remaining flour, then dip into the beaten egg and finally roll in the breadcrumbs.
Step 7
Heat half the oil in a frying pan, and cook the eggs, turning every 1-2 minutes, until they are golden out the outside.
Step 8
Put the eggs on a lined baking tray and cook in the oven for 25 minutes or until the pork is cooked through. Enjoy while warm, or cool them for a picnic.
