Veggie Egg Muffins

Method

Step 1

Preheat the oven to 180°C (160°C fan).  

 

Step 2

Lightly grease an 8-hole muffin tin.  

 

Step 3

Crack the Duncan's Eggs into a bowl, season with salt and pepper, and whisk well.  

 

Step 4

Stir in the spinach, pepper, onion, and  tomatoes.  

 

Step 5

Divide the mixture evenly between the muffin holes.  

 

Step 6

Bake for 18–22 minutes, until set in the middle.  

 

Step 7

Leave to cool for a few minutes, then remove from the tin.

Ingredients

  • 6 Duncan's Eggs  
  • 30g fresh spinach chopped  
  • ½ red pepper, diced  
  • ½ small onion, finely chopped  
  • 60g cherry tomatoes, halved  
  • Salt & pepper to taste  
  • Optional: pinch of chilli flakes or dried herbs
